Carrot Cake

2 eggs 1/2 cups vegetable oil 1 cups brown sugar 1 teaspoon vanilla extract 1 cup all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/4 teaspoon salt 1/2 teaspoon ground cinnamon 1 tablespoon grated ginger 1/2 teaspoon allspice 1.5 cups grated carrots .5 cup chopped nuts (almond, pecan, or walnut) — 1/4 cup butter, softened 4 ounces cream cheese, softened 2 cups confectioners’ sugar 1/2 teaspoon vanilla extract
Preheat oven to 350 degrees. Grease pan.

In a large bowl, beat together eggs, oil, sugar and vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in nuts. Pour into prepared pan.

Bake 25-30 minutes  Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
