I say that quesadillas are healthy fast food. What’s your vote?
You can make them in a flash, one or two in a skillet, or an entire big batch on a sheet pan in your oven. And, they can be easily customized to your family’s liking.
If your family will allow it, you can add veggies to the quesadillas, too.
My picky eaters always complain about veggies (they want boring meat and cheese inside) but I think veggies are a great way to boost quesadilla nutrition….and add a little variety, too. I especially like sautéed onions and bell peppers in my quesadillas – yum!
I also like to add black beans to my quesadillas (yes, in addition to the refried beans!) and if there’s some leftover cooked rice hanging around in my kitchen, I usually throw that into my quesadilla as well. Yep, the sky is the limit.

I like to use a 12-inch cast iron skillet when I brown ground meat, such as ground beef, sausage, turkey, or even venison. Heavy-duty bakeware, such as the rimmed baking sheets in this recipe, is also important for superior and quick browning. I like stainless steel or aluminum baking sheets with a 1-inch rim. These will last a long time if you never let them get close to the dishwasher – always hand wash your baking sheets!

Meanwhile, spread the refried beans over each tortilla, then sprinkle with shredded cheese.
