One of my favorite meals!! This one is a little spicy so if you aren’t a spicy food lover… this one may not be for you

Back in May, I became aware that I was suffering from food allergies and had no clue that the pain I was expecting was allergies! I found out that I was allergic to baker’s yeast, which was the worst thing that affected me!! Yeast is in some many things!! I also found out I was allergic to dairy, almonds, vanilla and carrots… yes carrots… who knew! So no almond flour tortillas for me. Anyways in my search to found foods that were better for my digestion issues; I found Buffalo Cauliflower Tacos!! This one has been added to a household regular. So this is how I put it together.

Buffalo Cauliflower Tacos

1/2 a head of cauliflower
3/4 cup of Buffalo Sauce (I use Franks)
1 TBSP Avocado Oil
1 TBSP of Chili Powder
1 TSP of Garlic Powder
1/4 Black Pepper
Romaine Lettuce
Cassava Tortillas

Ranch Dressing
1 cup of Non Fat Plain Greek Yogurt
3 TBSP of Ranch Seasoning Powder

1st cut up cauliflower in small pieces. You will want them to be bite size pieces. I usually put foil paper on the sheet or pan I use as well.

Next add spices to cauliflower.

Add 1/2 of Buffalo Sauce to the cauliflower along with Avocado oil.

Cook at 450 degree for 20 minutes. Broil on top rack for 5 more minutes so cauliflower is crispier! 25 minutes total!
Once it’s done blend the rest of the buffalo sauce to the cauliflower.
Lastly assemble tacos. Warm tortillas, add romaine lettuce leaf, sliced avocados topped with the cauliflower. Then add your ranch on top and Enjoy!!
